why not rack and pinion???

My 69 bus is going to need all new steering components, so I was thinking...why not upgrade to a mustang II/race car type manual rack and pinion??? They are around $200 + brackets and tie rods. I see that the RED9 front suspension design uses rack and pinion steering and buggies/ sandrails have rack and pinion.
Or even maybe an import car rack and pinion?

Can anyone tell me why nobody is using this system???
When I say manual rack and pinion, I mean that it does not require a power steering pump. I had one in both of my race cars.
